What

  • 1
    1 ripe banana
  • 2
    100 g lima beans
  • 3
    30 g almond flour
  • 4
    30 g regular flour
  • 5
    30 g oats
  • 6
    2 tablespoons coconut shaving
  • 7
    200 milliliters soy milk
  • 8
    A pinch of salt
  • 9
    Neutral oil for baking
  • 10
4 tablespoons pumpkin seed butter (or use peanut butter)
  • 11
4 tablespoons syrup (or as much as you desire)

How

  • 1
In a bowl, mash the ripe banana and lima beans together until you achieve a smooth consistency.
  • 2
Add almond flour, regular flour, oats, and coconut shavings to the mixture and combine until a thick, consistent paste forms.
  • 3
Slowly stir in the soy milk, avoiding pouring it all at once.
  • 4
Add a pinch of salt to balance the sweetness of the banana.
  • 5
Set the mixture aside for 5-10 minutes, allowing the dry ingredients to absorb the liquids.
  • 6
Meanwhile, heat a frying pan until hot. Before adding the first pancake, make sure the pan is properly prepared. Add a neutral oil once the pan is warm.
  • 7
Divide the pancake mixture into 4 equal portions, forming 4 pancakes of the same size. If your pan is large enough, you can cook all 4 pancakes together.
  • 8
Allow the pancakes to firm up before attempting to move or flip them. The bottom should be browned and the pancakes should be cooked through the middle. Once the pancakes reach this stage, flip them and cook until the other side is golden and the middle is cooked.
  • 9
For serving, begin by drizzling syrup onto the plate. Place the first pancake on top of the syrup and add another layer of syrup and a dollop of pumpkin seed butter. Stack the second pancake on top and repeat the process. For the final pancake, finish with a sprinkle of coconut shavings on top. Enjoy your delicious Banana Bean Pancakes!
