What

  • 1
    2 white onions
  • 2
    7 pieces of garlic
  • 3
    2 tablespoons harissa powder
  • 4
    1 tablespoon mediterranean herbs
  • 5
    1 tablespoon paprikapowder
  • 6
    1 tablespoon za'atar
  • 7
    70 grams tomato paste
  • 8
    400 grams lentils
  • 9
    200 grams lima beans
  • 10
    3 red pointed peppers
  • 11
    3 green pointed peppers
  • 12
    250 milliliters water
  • 13
    1 teaspoons pepper
  • 14
    1 teaspoon salt
  • 15
    1/2 lemon
  • 16
    Handfull of parsley
  • 17
    16 sheets filopastry

How

  • 1
Start by thinly slicing all the paprikas into tiny cubes. Cut them in half, slice thin strips, turn the strips for 90 degrees, and then cut thin strips again. Slicing the paprikas before cooking is recommended, as it takes time to achieve this perfect thinness.
  • 2
Pre-heat your oven to 180 degrees to ensure it's ready when needed.
  • 3
Heat up a pan with a thin layer of oil.
  • 4
Mince 2 white onions and add them to the hot pan. Allow the onions to caramelize slightly for added flavor.
  • 5
Mince the garlic pieces and add them to the pan with the onions, sautéing until they become aromatic.
  • 6
Add the harissa powder, paprika powder, za'atar, and Mediterranean herbs to the pan, and sauté them for 30 seconds to a few minutes, depending on the heat of your pan.
  • 7
Introduce the tomato paste to the pan, and let it de-sour for a few minutes.
  • 8
Drain the lentils and lima beans, adding them to the hot pan. Smash the lima beans with a wooden spoon to create a paste that combines the filling.
  • 9
Pour in water, and season with salt, pepper, and a bouillon cube. Let it cook for 5-10 minutes, allowing the flavors to meld.
  • 10
Chop the parsley and add it to the pan, along with the refreshing lemon juice. Stir all the ingredients together to create a harmonious filling.
  • 11
Prepare a baking tray with baking paper on top.
  • 12
Lay a sheet of filo pastry on the baking paper, and rub a thin layer of oil on top of the sheet. Place two tablespoons of the delicious filling lengthwise along the pastry, leaving a little space on the edges for folding. Roll up the pastry like a cigar, repeating this process until all the filling is used.
  • 13
Pop the tray in the oven, and bake for 30-35 minutes or until the Borek turns golden and crisp.
  • 14
Once done, savor your creation with a delightful mint and garlic dip, enhancing the overall experience.
