Wash your pomelo. If you have an organic pomelo, you can leave the skin on. Otherwise, I advise cutting off the skin because it could contain toxins. Slice the pomelo and put it in a tall glass.

Peel the ginger and slice it into strips. If you want the ginger to really come through, cut it into small pieces. The smaller the pieces, the stronger the taste. Add the ginger to the glass.

Wash the mint and add it to the glass.

Pour half a can of Rudy's Kombucha into the glass.

Fill up the rest of the glass with sparkling water.

If you really want all the flavors to fuse, put it in the fridge for at least 30 minutes. Enjoy your kombucha iced tea!
