Falafel lunch salad

What

  • 1
    4 medium sized roma tomatoes
  • 2
    4 quarter pickles (or one big pickle)
  • 3
    1/4 head of lettuce
  • 4
    1 avocado
  • 5
    1/2 red onion
  • 6
    1/2 yellow bell pepper
  • 7
    1/3 cucumber
  • 8
    200 grams falafel
  • 9
    2 big tablespoons of hummus
  • 10
    2 tablespoons of black olives (optional)
  • 11
    2 tablespoons olive oil
  • 12
    Salt and pepper to taste

    Add a thin layer of olive oil to a frying pan and place the falafel in it. Bake them until they turn golden brown, which usually takes about 5 minutes. In the meantime, prepare the other ingredients.

    Cut the tomatoes, pickles, lettuce, avocado, red onion, bell pepper, and cucumber into small pieces (or larger if you prefer). Add all the veggies to a large bowl.

    Once the falafel are baked, add them to the bowl.

    Next, add a generous dollop of hummus, some black olives, a drizzle of olive oil, and season with salt and pepper.

    Mix the salad together well and enjoy!
