Roasted chickpeas: the simplest plant-based protein. If you've got a can of chickpeas and some spare spices, this recipe is for you. Quick, easy, and nutritious. If you're into plant-based eating and need more protein in your diet, this trick is a must-know.

What

  • 1
    75 grams olive oil
  • 2
1 big teaspoon of smoked paprika powder
  • 3
    1 teaspoon garlic powder
  • 4
    1 teaspoon chili flakes
  • 5
    1 teaspoon freshly cracked pepper
  • 6
1/2 teaspoon salt (or more to taste)
  • 7
    1/2 lime (juiced)
  • 8
    1 sprig of fresh thyme

How

  • 1
Preheat your oven or grill to 180 degrees Celsius. If you don't have a grill, use your oven at the same temperature, but be prepared for slightly longer cooking time.
  • 2
Drain the chickpeas and set them aside.
  • 3
Drizzle a thin layer of oil into an oven tray.
  • 4
In the same tray, combine smoked paprika, garlic powder, chili flakes, freshly cracked pepper, salt, and the juice of half a lime. Mix until the ingredients form a well-blended spicy oil.
  • 5
Toss the chickpeas in the spicy oil mixture until well coated.
  • 6
Add a sprig of thyme on top for an aromatic touch.
  • 7
Roast in the oven for about 15 minutes or until the chickpeas reach your preferred level of crispiness. For a crunchier exterior, leave them in longer. If you like them a bit softer, 15 minutes should suffice, but keep in mind that cooking time can vary depending on your oven and personal preference. Enjoy!
