Home-made pickled green onions

    12 green onions
  • 2
    1 tablespoon of salt
  • 3
    1 tablespoon peppercorn
  • 4
    1 teaspoon coriander seeds (optional)

    1 cup water

    1 cup vinegar

    Clean your green onions by first removing the outer layer. This layer often contains dirt, and removing it before washing prevents the spread of dirt. Once you've removed the outer layer, you can wash them.

    Cut off the roots of the green onions and slice them into even rings. You can also use the green part of the onion. You can cut up to a centimeter from the edge. Just don't use it if the outer green part is mushy; in that case, avoid using that part altogether.

    Place the green onions in a glass jar that can be sealed airtight, such as a mason jar or a jar with a screw cap.

    Prepare the brine by adding 1 cup of vinegar and 1 cup of water. The ratio should always be 1:1 water to vinegar.

    To the brine, add a tablespoon of salt, a tablespoon of peppercorns, and optionally, a teaspoon of coriander seeds. Coriander seeds have a distinct taste, so if you prefer a milder pickle, you can leave them out. Feel free to add any other spices you like. Chili flakes can also be a nice addition. Adjust the spices to your taste.

    Heat the brine until the salt is dissolved; there's no need to bring it to a boil.

    Pour the brine into the jar with the green onions.

    Seal the jar of onions and let it cool.

    Enjoy once the onions have cooled off.
