    1 tablespoon coconut oil (optional, use if you want your granola to form clusters)

    1 tablespoon walnuts

    1 tablespoon brazil nuts

    1 tablespoon sunflower seeds

    1 small mango

    2 strawberries

    300 g soy yogurt

    2 tablespoons homemade not-tella (or vegan nutella)

    1 cm ginger

    Cut the walnuts and Brazil nuts into appropriately sized pieces.

    Heat up a tablespoon of coconut oil in a pan.
  • 3
    Add the walnuts, Brazil nuts, sunflower seeds, and oats to the hot pan.

    Peel the ginger and use a fine grater to grate it over the granola.
  • 5
    Bake until crispy and the nuts smell aromatic. This will take approximately 5-8 minutes, depending on the heat of the pan.

    Peel and thinly slice the mango and strawberries.
  • 7
    Add 3 large tablespoons of soy yogurt into a bowl and layer with the fresh mango and strawberries. Top off with the freshly made granola and a swirl of notella. You can find the recipe on my recipe page.
