Sandwich with guacamole, silk tofu and sriracha

What

  • 1
    6 slices firm whole wheat or brown desem bread
  • 2
    3 small avocados
  • 3
    7 small Roma tomatoes
  • 4
    1 spring onion
  • 5
    2 tablespoons olive oil
  • 6
    Pepper and salt to taste

    1/4 lemon
  • 8
    300 g silk tofu
  • 9
    2 tablespoons cajun powder
  • 10
    6 slices bread
  • 11
    Drizzle sriracha sauce

How

    Slice the tomatoes into small pieces and the spring onion into thin rings.
  • 2
    Mash the avocado with the tomatoes and the spring onion.
  • 3
    Add olive oil, lemon, salt, and pepper to taste.

    Slice the silk tofu into cubes.
  • 5
    Heat up a neutral oil in a pan and add the silk tofu to the pan.

    Sprinkle the cajun powder over the tofu and briefly bake the tofu in it.

    In another pan or toaster, grill the sandwiches until crunchy.

    Layer the sandwich with a spoonful of guacamole, add a few cubes of tofu, and drizzle as much sriracha over it as you want.
